Coco-Chill: Enjoy Students' Full-Use Coconut Pack

Graduate students in the Food Science and Technology Department of the Kwame Nkrumah University of Science and Technology (KNUST) have developed an innovative coconut packaging solution that combines fresh coconut water with its nutrient-dense hard meat in a single convenient product.
This student-led innovation addresses a common challenge: accessing both coconut water and its meat simultaneously.
Their ready-to-enjoy packaging allows consumers to hydrate with natural coconut water, nourish themselves with the coconut’s hard meat, and reduce waste by maximizing coconut utilization.
Unlike many commercial coconut products that separate the water from the meat, often leading to nutrient loss, this breakthrough solution preserves the full nutritional benefits of the coconut while making it more accessible.
Molanda Aba Keteku-Atiemo, Nancy Konadu Sarfo, Caleb Amponsah Atiemo and Esther Baah are the students behind the innovation with supervision from Prof Mrs Faustina Dufie Wireko-Manu and Dr Eric Owusu Mensah.
