USE OF RHEOMETER IN THE FST LAB
Rheology is defined as the study of flow behaviour. It is the science of the flow and deformation of matter.
A rheometer is an instrument that measures the viscosity, elasticity, and viscoelasticity of fluids, semi-solids, and solids.
The Department of Food Science and Technology (FST), KNUST has acquired a state-of-the-art rheometer (Modular Compact Rheometer, MCR 92) for training, research, and analysis of rheological properties of biopolymers, food, and non-food materials.
