Welcome to the Department of Food Science and Technology (FST) at KNUST.
Our department is committed to excellence in scientific research and innovative approaches to advancing food systems for a sustainable future. As a leading institution in Ghana and across Africa, we aim to empower students, researchers, and industry partners to develop sustainable food solutions that contribute to food security, improved nutrition, and sustainable development.
Our mission is to train competent professionals and researchers equipped with the scientific knowledge, technical skills, and ethical values necessary to support innovation and evidence-based practices in the food and agro-processing sectors.
For our students, we offer a dynamic, learner-centered environment that combines theoretical knowledge with practical experience through laboratory work, pilot-scale production, and industrial attachments. Our graduates are prepared to become leaders, innovators, and entrepreneurs contributing meaningfully to national and global food systems.
To our industry partners, we serve as a strategic collaborator in research, product development, quality assurance, food safety management, and packaging innovation. We value partnerships that translate scientific research into practical solutions, thereby adding value to local raw materials and enhancing the competitiveness of Ghana’s food industry.
We welcome collaboration with research partners for joint research projects, knowledge exchange, and capacity-building initiatives. Our focus areas include food safety, functional foods, processing technologies, and sustainability, aligning with the United Nations Sustainable Development Goals (SDGs) and Ghana’s development priorities.
Over the years, FST-KNUST has earned a reputation for excellence in food research, innovation, and professional training. Our staff and students contribute to impactful research in areas such as food safety, product development, processing technologies, nutrition, and value addition to Ghana’s key agricultural commodities, including cocoa, fruits, vegetables, cereals, legumes, and root and tuber crops. Additionally, FST-KNUST serves as the Secretariat for the Ghana Association of Food Scientists and Technologists (GhAFoST), underscoring our leadership role within Ghana’s scientific community.
Our department is equipped with modern facilities, including an ISO-accredited Food Analysis Laboratory, a Food Microbiology Laboratory, an Aflatoxin/Mycotoxin Laboratory, a state-of-the-art rheometer, and a Food Processing Unit, all supporting high-quality teaching and research. We maintain strong collaborations with other academic institutions and industry partners, providing students with practical experience through internships, industrial attachments, and real-world projects.
Our key strengths include a focus on applied research, contributions to national food safety and quality standards, leadership in value addition and agro-processing innovation, and a long-standing commitment to training professionals who serve in academia, regulatory agencies, government institutions, and the private sector both locally and internationally.
